INGREDIENTS
- 3 tomatoes, seeded and diced
- 45 ml (3 tablespoons) extra-virgin olive oil
- 60 ml (1/4 cup) sliced black olives
- 15 ml (1 tablespoon) capers, drained
- 30 ml (2 tablespoons) balsamic vinegar
- 30 ml (2 tablespoons) pesto
- 1-120 g (4.2 ounces) can chunk light tuna, drained
- 4 slices Gadoua Moelleux whole wheat bread

PREPARATION
Preheat broiler.
Gently combine tomatoes, 15 ml (1 tablespoon) olive oil, olives, capers, vinegar, pesto and tuna in a bowl. Cover and refrigerate for 30 minutes. Let stand at room temperature 10 minutes before serving.
