INGREDIENTS
- 2 slices Gadoua Vitalité 14 Grain bread
- 1/2 cooked chicken breast, sliced (or 4-5 slices chicken cold cut)
- 1/4 ripe avocado, sliced
- 1/2 small ripe tomato, sliced
- Few leaves of baby spinach
Sesame Mayonnaise
Sesame complements the naturally nutty flavour of Gadoua Vitalité breads. Roasting the sesame seeds takes only a few minutes but adds an extra punch of taste… and crunch!
N.B. Leftover mayonnaise can be refrigerated 2-3 days.
- 10 ml (2 teaspoons) white sesame seeds
- 30 ml (2 tablespoons) regular or low fat mayonnaise
- 1 small green onion, chopped finely
- 2.5 ml (1/2 teaspoon) lemon juice
- 2.5 ml (1/2 teaspoon) sesame oil
- Pinch of salt and pepper

PREPARATION
In a dry frying pan over medium-high heat, roast sesame seeds 5-7 minutes until golden brown. Combine with mayonnaise ingredients, blending well. Salt and pepper to taste.
Spread half of mayo on one slice of Gadoua Vitalité 14 Grain bread. Garnish with layers of chicken, avocado, tomato and spinach. Spread remaining mayo on second slice of bread, close and serve.
Alternative: Replace the avocado with sliced mango and, instead of sesame mayonnaise, spread a simple blend of mayonnaise and pesto on bread. |
